Stuffed Chicken Breasts

INGREDIENTS:

4 chicken breasts (700gm)

115 gm long grain brown rice (cooked)

60gm raisins

Salt & pepper to taste

2 tbsp of lemon juice

5 tbsp of vegetable oil

INSTRUCTIONS:

Open the 4 chicken breasts in half by cutting them from the side.

In a bowl, mix the cooked rice and the raisins, and taste with salt, pepper, and lemon juice. With this mix you will refill the chicken breasts.

Add a couple of spoons of the rice mix in the middle of the open chicken breasts and then close and secure with a toothpick skewered in both sides.

In a pan with the oil, add the stuffed chicken breasts and let cook for about 15-20 minutes until golden.

Place in the plate with some salad and any dressing you like.
